Creamy Garlic Parmesan Chicken (Keto)

🥘 Ingredients:

  • 2 tbsp olive oil or avocado oil

  • 4 boneless, skinless chicken thighs or breasts

  • Salt and pepper to taste

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1 cup spinach (optional, but great for nutrients and color)

  • ¼ tsp crushed red pepper flakes (optional, for a little kick)

🔪 Instructions:

  1. Season the Chicken: Sprinkle both sides of the chicken with salt and pepper.

  2. Sear the Chicken:
    Heat the oil in a large skillet over medium heat.
    Sear the chicken for about 5-6 minutes per side, or until golden brown and cooked through.
    Remove chicken and set aside.

  3. Make the Cream Sauce:
    In the same skillet, lower the heat and add garlic. Sauté for about 30 seconds until fragrant.
    Pour in the heavy cream and bring to a gentle simmer.
    Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until melted and smooth.

  4. Add Spinach (optional):
    Stir in the spinach and cook until wilted (2–3 minutes).

  5. Combine and Serve:
    Return the chicken to the pan and spoon sauce over the top. Let it simmer together for a couple of minutes.
    Serve hot, optionally over cauliflower rice or with roasted veggies.

This dish is rich in fats and protein while keeping carbs low—perfect for staying in ketosis. Using chicken thighs adds more flavor and fat, which is great for keto.
